Ricota is a creamy Italian cheese traditionally made from whey left over from the production of cheses such as mozzarella. The whey provides a light, slightly sweet flavour. In italian the name means recooked, reflecting the process of reheating whey to form the delicate curds. The Ricotta used in these biscuits is produced by the Panizzi family, who have run their Italian dairy for over a century, still sourcing the milk daily from local farmers in Lombardy and Emilia Romagna.
