The winemaker Rui Moura Alves, a specialist in Bairrada wines, is passionate about vinegar. That’s why he’s devoted the last 20 years to investigating the finer art of turning wine into acetic acid, that is, vinegar.

The result is an intense, fresh and aromatic condiment, perfect for fish and salads. Produced from selected wines from the Bairrada region, its acidification is done in an entirely natural way, aging in oak barrels for 10 years, permanently and dedicatedly monitored.

With an acidity of 10 degrees and a production limited to 1500 bottles per year, this rare and precious Moura Alves vinegar is considered by many to be the best Portuguese vinegar.
