The cockles of the Galician Estuaries from the Real Conservera Española are gourmet preserves prepared in a natural broth that consists of the cockles themselves, onion, bay leaf, lemon, salt and water.

These gourmet preserves come from the Noia estuary, located south of A Coruña, under the protected name of Cofradía de Noia. These cockles follow very careful and rigorous cleaning processes. First, the cockles are purified with sea water for 16 hours. Then they arrive at the facilities of the Real Conservera Española, where they are chipped and subjected to several washings to remove the remains of sand. And finally, they are packed in brine made with lemon, bay leaf, water and salt. All canned cockles are hand-packed, in order to control that they are placed correctly. After packaging, the durability of canned cockles is 4 years. To ensure that they do not deteriorate prematurely, we should store them in a dry place at room temperature.
When consuming cockles, serve them as a main dish for snacks or as an ingredient in the preparation of other dishes. The Real Conservera Española recommends not discarding the liquid from the topping, as it is a natural and highly concentrated broth which gives it a special flavour. Also, if you are going to eat them as an appetizer, they recommend serving them directly in the can, and not on plates. The Real Conservara cockles stand out for their delicate cleanliness, which ensures the absence of any sand residue.
