Chinese black vinegar is rich, sour and slightly sweet – with a fermented malty flavor and woody character that distinguishes it from light-colored, fruity rice vinegar. This one is made by one of the oldest and most well-known producers in the country, which ages the dark liquid for 3 years in traditional urns to reach its complexity.
Product Description
Originating in the city of Zhenjiang, glutinous rice and other grains such as wheat, barley and a type of pea are fermented by traditional methods to make the seasoning. The flavor and color of the vinegar can be adjusted by adding water filtered through the heated rice until it turns black. This vinegar is produced by the century-old Jiangsu Hengshun Vinegar company, it is aged for 3 years in traditional urns to promote a deeper and more complex taste.
