Chocolate Mousse with Tarts of Olive Oil

For all chocolate lovers, we have this recipe which, despite being sugar-free, maintains its delicious texture.

Preparation Method

  1. Separate the egg yolks from the egg whites. Place the egg whites in a large bowl along with a pinch of salt and beat until stiff with a whisk. Set aside.
  2. On the other hand, chop the chocolate and melt it in a bain-marie. Remove from the heat and leave to cool.
  3. Add the egg yolks and mix very well until they are incorporated.
  4. Add the beaten egg whites and mix with gentle movements so that they do not fall apart.
  5. Divide the mousse into individual bowls and leave in the fridge for at least six hours.
  6. Serve with some currants on top, a sprinkling of grated chocolate and some pieces of Olive Oil and Cinnamon Tarts.
