Madeira-style Vinha d’Alhos meat

Carne de vine-d’alhos is one of the delicious typical dishes on Madeira Island.

Preparation Method

  1. Cut the meat into cubes. Drizzle with wine and vinegar. Add the bay leaf, crushed garlic and cloves. Season with salt and pepper.
  2. Leave to marinate for at least 6 hours.
  3. Brown the meat in a frying pan with the lard, until it is golden.
  4. Serve with slices of orange and bread fried in olive oil, garnished with sprigs of parsley.

Tip: Vinha d’alhos is a sauce made with wine, garlic, bay leaf and salt, used to season meat before cooking it.
