Roasted Fillet with Pig Sauce and Potato Chips

This recipe is very tasty and reminds us of roast suckling pig, for its seasoning and side dishes.
It is very important that the bacon is as thin as possible so that it does not become a heavy and cloying dish.
You can make this recipe with country chicken, it is equally delicious.

Ingredients

  • 1.4 kg of whole bacon
  • 4 cloves of garlic
  • 1 teaspoon of salt
  • 1 coffee spoon of powdered bay leaf
  • 2 tablespoons of pork lard
  • Orange cut into slices
  • Potato Chips

Preparation Method

  1. Cut the garlic cloves into pieces and place them in a mortar. Add the salt, bay leaf powder and plenty of freshly ground black pepper. Crush very well until it becomes a paste. Gradually mix in the lard. Spread the bacon evenly with the seasoning. Let it taste for 2 hours.
  2. Insert a wire rack into a baking tray, preferably made of clay. On top, place the bacon with the rind facing up. Drizzle the bacon with a glass of wine.
  3. Place in a preheated oven at 180ºC and bake for 2 hours. Every 20 minutes, drizzle the streaky with a little white wine. After 2 hours, drizzle the white wine for the last time and put it back in the oven for 30 to 40 minutes until the rind is crispy and the sauce has thickened.
  4. After the time, remove and serve with the sauce, slices of orange, sliced fries and salad. Enjoy your food!
