It is used commonly in both Chinese and Japanese cuisine. The taste is comparative to na oyster or shiitake mushrooms.

Wash and soak the white back black fungus in warm for 60 minutes till soft, then add to stir-fry or stew dishes at 100ºC for 20 minutes.
