Cognà is a recipe with ancient origins prepared in the old Langa farmsteads, where at the end of summer the grape must from the first harvests was slowly cooked and enriched with quinces, Madernassa pears, walnuts and hazelnuts to create a delicious compote to be enjoyed during the winter. It can be used as an accompaniment for cheese, meat and desserts.
