Lamb Ribs with Flavored Olive Oil

Preparation Method

  1. Start by cleaning the lamb ribs, leaving the bone without meat.
  2. Wrap the bones in aluminum foil so they don’t burn while grilling the ribs.
  3. Grill the ribs, brushing them with rosemary-flavored oil.
  4. Grill the cherry tomatoes on the grill.
  5. Cook the potatoes cut into wedges, and steam the broccoli.
  6. Saute the potatoes in olive oil, sprinkling them with chopped parsley.
  7. Serve the ribs sprinkled with fleur de sel and drizzle with the flavored oil.

Chef’s Tips:
Strike the broccoli stalks crosswise, so that they cook faster and more evenly. The fleur de sel is only used in the final stage when it is used for plating.
