Like lard, M. de Turenne Goose fat is rich in “heart-healthy” monounsaturated fats that can lower blood cholesterol levels and protect from cardiovascular attacks. Very soft at room temperature, it tolerates high cooking temperatures and has a long life. Use Goose fat to flavor on special occasions, otherwise prefer the quality of olive oil and preferably organic.
Usage Suggestions:
When you are cooking with goose fat, you need far less of it than you would an oil, because it doesn’t evaporate away or get absorbed into food as much as oil does. Ideal for frying or roasting potatoes, sautéed vegetables, to cook your meats or even to make sweets.
