Preparation Method

  1. After washing well, cut the chicken into uniform pieces. Place in a bowl.
  2. Season with salt, drizzle with the wine and add the thyme, rosemary, crushed garlic cloves, bay leaves, and half the parsley.
  3. Leave to marinate overnight in the fridge.
  4. Heat the olive oil in a pan and add the chicken pieces, drained from the marinade, and the bacon.
  5. Cover for 2 minutes, then refresh with the marinade liquid.
  6. Cook for 15 minutes and add the whole peeled spring onions.
  7. Add the mushrooms and stew until the chicken is tender.
  8. Accompany the chicken with mashed potatoes.
