Fried Blue Jack Mackerel with Villain Sauce

Typical dish of Azorean cuisine made with a fish that is abundant in the sea of the Azores. Usually served with boiled potatoes and with a sauce made with garlic, parsley, ground pepper, vinegar and white pepper.

Preparation Method

  1. After the mackerels are cleaned, season with salt, pepper and garlic.
  2. Separate the yolk from the white of an egg and stir the yolk;
  3. Wrap the mackerels one by one, in the yolk and then in the flour. Fry the mackerels;
  4. For the sauce, place the garlic in the seasoning of the mackerels in a frying pan, 2 tablespoons of ground pepper, a drizzle of olive oil and the white wine;
  5. Wait for the sauce to finish;
  6. Serve the mackerels with the sauce and with boiled potatoes.
