Pistachio Cake with Fresh Figs and Almonds Chocolate Amanduo

Ingredients

For the cake
To the ice
For decoration
  • Fresh figs
  • Chocolate Amanduo Almonds

Preparation Method

For the Cake:

  1. Turn on the oven to 180º C.
  2. Beat the egg whites with half the sugar until you get a meringue. Book it.
  3. Beat the egg yolks with the rest of the sugar until pale and you get a pale, frothy milkshake.
  4. Reduce the mixer speed to a minimum and add the oil in a thin stream. Stop beating once it’s incorporated.
  5. Using a spatula and using circular motions, add the flour, ground pistachios, and meringue.
  6. Place in a greased and floured shape and bake for 30 minutes, or until a toothpick or knife inserted comes out clean. Unmold and let cool on a wire rack.

For the icing:

  1. Melt the chocolate in the microwave or in a bain-marie and add the coconut oil.

For Decoration:

  1. Cover the cold cake with the frosting and decorate with the figs cut in four and the Chocolate Amanduo Almonds, roughly chopped.
