Quinoa salad with mackerel

Preparation Method

  1. Put the quinoa in a colander, rinse it under running water, put it in a saucepan with the water and half the salt and bring to the boil.
  2. Simmer, covered, over a moderate heat for about 15 minutes.
  3. Wash the tomatoes, clean them of seeds and chop them up.
  4. Drain the beans, rinse them and add them to the tomato.
  5. Add the drained mackerel fillets, the red onion, peeled and cut into thin slices, and the rocket leaves.
  6. Season with the remaining salt, drizzle with olive oil and vinegar, add a few chopped mint leaves and mix well.
  7. Fluff up the quinoa with a fork and mix with the rest of the ingredients. Serve immediately.
