Sweet and Sour Fried Tofu

  1. In a glass jar combine rice vinegar, sriracha sauce, oyster sauce, soy sauce, coconut sugar and wok oil. Mix well and set aside.
  2. In a frying pan stir fry the cubed tofu for 3-5 minutes until golden brown. Remove the tofu from the oil, place to drain on kitchen paper.
  3. In a large pan, sauté the garlic over medium-high heat until just beginning to brown. Add all the vegetables at once, tossing quickly to mix.
  4. Add the seasoning sauce and tofu and toss to coat the sauce. Cook until cooked through, finally include chives and cashew nuts.
