Tofu Thai Satay with Peanut Sauce

A vegetarian version of the popular Thai satay recipe, full of flavors and accompanied by a peanut sauce.

Preparation Method

  1. Crush 2 cloves of garlic using a mortar and pestle. Set aside.
  2. In a bowl, mix together yellow curry paste, crushed garlic, coconut milk, coconut sugar, and light soy sauce. Set aside.
  3. Peel the mushrooms and cut them into large cubes. Cut the tofu into large cubes.
  4. Place the diced tofu and mushrooms in the marinade. Insert onto skewers, trying to line them up evenly and push them together closely.
  5. Heat oil in a large non-stick frying pan over medium-high heat until hot.
  6. Add skewers to the pan and cook for a few minutes, turning occasionally, or until cooked through and browned. Brush with the marinade left over the marinade.
  7. Place skewers on a plate and top with fresh coriander. Serve hot with Coconut and Peanut Satay Sauce.
