Rosemary is a perennial shrub with very thin, linear, sessile leaves that grows spontaneously along the Mediterranean coast. Its upper surface is a bright green, while the underside is white and velvety. It blooms between March and October, and its flowers are small, clustered in clusters, blue-purple with lilac nuances.

The name rosemary, according to some sources, derives from Rosae maris (rose of the sea), while others say it comes from Ros marinus, meaning dew of the sea. According to legend, the flowers were initially white but turned blue-purple after absorbing the color of Mary’s mantle, which was hung to dry on the branches of this plant during the flight to Egypt.

Rosemary is among the most widely used culinary herbs, especially in the Mediterranean diet, also because it aids in the digestion of fats. This aromatic plant also improves food preservation, as it acts as a true natural antioxidant. When using it, fresh leaves are chopped, while dried leaves are crushed before use, thus preserving their aroma.

Indispensable in meats, fish, and sauces, rosemary is the most used seasoning in grilled dishes and marinades: it is used with lamb, beef, rabbit, duck, and goose. The flower is used to flavor salads; the leaves, fresh or dried, are added to various dishes, such as roasts, stews, potato dishes, and rustic pies.

It is even excellent in breads and focaccias. Rosemary sprigs are also used with garlic to flavor olive oil and vinegar, with excellent results.

Rosemary is rich in therapeutic properties and remains extremely useful today. It is considered a tonic with a stimulating and fortifying effect, and possesses antiseptic, antiparasitic, antibacterial, anti-inflammatory, antispasmodic, and antioxidant properties, as well as digestive, aromatic, and carminative properties. It also has a beneficial effect on the liver.
