Yuzu Cake

Yuzu is a citrus fruit native to Eastern China. It has an appearance of a grapefruit, a very aromatic rind, and an intense, acidic flavour reminiscent of tangerine.

Ingredients

  • 120g butter
  • 2 whole eggs
  • 120g flour
  • 60 ml yuzu juice

Preparation Method

  1. Preheat the oven to 180°C.
  2. Mix the softened butter with the sugar, and add the whole eggs and the yuzu juice.
  3. Finalize by incorporating the flour.
  4. Grease a cake tin with butter, then line it with icing sugar or use a silicone baking tin.
  5. Pour the mixture into the mold, taking care not to exceed 2cm in height, and bake for 15-20 minutes at 180°C.
  6. Unmold after baking and consume at room temperature.
