Smoked Harissa or Berbère from the Jardins de Carthage brand is a premium condiment originating from Tunisia, renowned for its perfect balance between intense spiciness and a complex aromatic profile. This type of harissa has even been called the “new Sriracha” in the Western market due to its culinary versatility.

Unlike common industrial harissa, the Berbère recipe uses peppers subjected to a natural drying and smoking process, giving it a deep smoky flavor that enriches roasts and grilled dishes.

It is composed of sun-dried cayenne pepper, smoked pepper, garlic, salt, and traditional Mediterranean spices (such as cumin and coriander), preserved in vegetable oil. It presents itself as a rustic and dense paste, ground in a way that retains fine pieces of the pepper skin and seeds.

Storage:

Store in a cool, dry place. Once opened, refrigerate for a maximum of 15 days.

Usage Suggestions:

It can be used as a base for tagines and couscous: Dissolve a teaspoon in the hot broth of the stew to add depth and color. In marinades: Mix harissa with olive oil, lemon juice, and aromatic herbs to brush lamb, chicken, or oily fish before grilling.
