Broken eggs

Broken eggs are an old Spanish recipe, based on fried potatoes sautéed in onions and thin slices of ham, with fried eggs on top, which must be rare so that the yolk is broken and runs over the potatoes. This is where the name of this dish comes from, which means “broken eggs”.

Ingredients

  • Potatoes
  • 2 eggs per person
  • Sliced ​​ham
  • Garlic powder
  • Oil

Preparation Method

  1. Wash the potatoes well and cut them into sticks, keeping the skin on.
  2. Then wash the potato sticks well to release the starch.
  3. Put a deep frying pan on the fire, with oil and let it heat up to 180ºC.
  4. Dry the potatoes well before putting them in the oil.
  5. Carefully place them in the oil and let them fry.
  6. Meanwhile, crack the eggs. Reserve.
  7. When the potatoes are fried, remove them from the oil and let them drain on absorbent paper for a few minutes.
  8. Transfer the potatoes to a serving platter.
  9. Season with salt and, if you like, also with garlic powder, or any other spice you prefer, for example, smoked paprika. Engage well.
  10. Place the fried eggs and slices of ham broken in a smaller size on top.
  11. Break the eggs over the potatoes and mix well.
  12. Serve it hot.
