Chestnut Cake from Sernancelhe

Sernancelhe is quite famous for its chestnuts. In this recipe they are highlighted, being the chestnut cake of Sernancelhe traditional in this region of Viseu.

Preparation Method

  1. Preheat the oven to 170°C.
  2. Cut the shell of the chestnuts and cook them for about 30 minutes in boiling water.
  3. While still warm, peel and crush them.
  4. Place the milk and sugar in a pan and bring to a boil.
  5. Add the chestnuts and stir until you get a thick paste. Remove from the heat, place in a bowl, and leave to cool.
  6. Meanwhile, beat the egg whites until stiff.
  7. Add the beaten egg whites and flour alternately to the chestnut mixture and milk. Add the vanilla essence.
  8. Pour the mixture into a caramelized tin and bake in the oven for about 1 hour.
  9. Remove the cake from the tin while it is still warm, place it on a plate and decorate with chestnuts.
