Preparation Method

  1. Place the tofu in a bowl and break it up with a fork.
  2. Place a pan over low to medium heat and add vegetable oil. When the oil is heated, add the crumbled tofu. Cook until the tofu is fragrant and browned. Stir continuously so it doesn’t stick or burn. Set aside.
  3. In a frying pan stir the chopped button mushrooms until golden brown. Set aside.
  4. Crush 3 cloves of garlic using a mortar and pestle.
  5. Heat in a wok, or vegetable oil over medium-high heat. When the oil is hot, add the garlic, and the peppercorns. Stir until fragrant. Add the green beans, and crumbled tofu and cook, stirring, until softened. Add the Thai spices, coconut sugar, and light soy sauce. Cook until the vegetables are just tender.
  6. Add the cooked mushrooms, and dried chilies. Stir in a large handful of fresh basil. Stir until cooked through.
  7. Place on a plate and top with fresh basil. Serve warm with steamed rice.
