Gin, Raspberries and Lime Cocktail

A cool cocktail, great for a summer afternoon.

Ingredients

  • 60 ml raspberry syrup: (50 g sugar + 150 g raspberries + 40 ml water)
  • 20 ml of lime juice
  • 160 ml of sparkling water

Preparation Method

  1. Start by making the syrup. Put the sugar, raspberries, and water in a small pan and bring to a boil.
  2. When it boils, simmer for 2 minutes.
  3. Strain the resulting liquid through a strainer.
  4. Chill until cold.
  5. Place the syrup, gin and lime juice in a shaker. Shake vigorously.
  6. Pour into glasses and add the chilled sparkling water.
  7. Garnish with raspberries and zest or thinly sliced lime peel.
