Maple syrup fudge

A healthy fudge to share with friends.

Ingredients

  • butter for greasing q.b.
  • 240 ml of cream
  • 3 tablespoon of butter
  • 2 tablespoonfuls of chopped almonds
  • Caster sugar to taste

Preparation Method

  1. Line a small baking tray with baking paper. Grease the sheet with a little butter and set aside.
  2. Place the maple syrup in a medium pan and bring it to a boil over low heat for 5 minutes, keeping a close watch.
  3. Add the cream and, without stirring, let it boil for 20 minutes on low heat, until it reaches 115ºC.
  4. Add the butter and, again without stirring, let it cool down for about 8 minutes.
  5. Pour the mixture into a bowl and beat it with a mixer until it is very thick.
  6. Pour the mixture into the tray and sprinkle it with chopped almonds.
  7. Place in the fridge for about 3 hours. Serve the fudge sprinkled with icing sugar.
