Mushroom Spaghetti with Shiitake and Parsley Sauce

Preparation Method

  1. Make the parsley pesto by mixing the parsley bunch, the garlic clove, olive oil and a little salt. Set aside.
  2. Cut the mushrooms into thin slices. Heat a frying pan with olive oil and sauté the mushrooms until golden brown.
  3. At the end of cooking, season the mushrooms with a pinch of shiitake soy sauce and pepper.
  4. Meanwhile, boil in a large pot of water and cook the spaghetti for 5 minutes.
  5. Season the spaghetti with the shiitake soy sauce and rice vinegar.
  6. Arrange the spaghetti on plates. Arrange the sautéed mushrooms and some of the parsley pesto.
