Preparation Method

  1. Heat the oil in a wok over medium heat, then when the oil is hot enough add the minced garlic. Stir the garlic well until it turns golden brown.
  2. Next add prawns, then stir occasionally until they are almost cooked. Add the diced carrot and chopped shallot. Continue stirring until carrot is cooked through.
  3. Add cooked rice, a pinch of salt, sugar, a pinch of white pepper, fish sauce, oyster sauce, and pineapple chunks. Finally, add the chives and stir until all ingredients are well mixed (about 2-3 minutes).
  4. Remove your fried rice from the pan and top with fried cashew nuts and dried sultanas. Garnish with a handful of coriander and serve with lime.
