Tiramisu with Raspberries

Ingredients

For the mousse
  • 400g mascarpone
  • 1 dl cream
  • 20g icing sugar
  • some fresh mint leaves
For the raspberry coulis
  • 8 raspberries
  • 10 g brown sugar
  • 1 dl craft beer

Preparation Method

  1. Cut the raspberries into cubes. Divide them into glasses and add the craft beer. Leave to marinate.
  2. Make the mousse by beating the mascarpone, icing sugar, and cream with a mixer. Then carefully mix in the chopped mint.
  3. Mix the raspberries with the beer and caster sugar for the coulis.
  4. Cut the pain d’épices into equal cubes.
  5. Finish the glasses in layers: the mousse comes on top of the raspberries, then the cubes of pain d’épices, and then the coulis.
