Walnut Cake and Marmalade

These walnut cakes with marmalade, a sweet made from fresh quinces, without colourings or preservatives. A real treat!

Ingredients

  • 150 g butter
  • 1 tablespoon of butter (for greasing)
  • 80 g jam
  • 1 unit of orange
  • 1 tablespoon cinnamon powder
  • 4 pieces of eggs
  • 150 g walnut kernels
  • 80 g flour
  • 1 tbsp. flour (for sprinkling)
  • 1 tablespoon quince jam
  • 1 tablespoon of grated coconut

Preparation Method

  1. In a bowl, mix the sugar and butter. Add the diced marmalade, half the orange zest and the cinnamon.
  2. Separate the egg yolks from the egg whites. Set the egg whites aside and add the egg yolks to the previous mixture. Mix well.
  3. Add the walnut kernels and flour and beat well.
  4. Beat the egg whites until stiff and fold into the mixture.
  5. Pour the mixture into greased and floured mini cake tins.
  6. Bake in the oven, preheated to 180°C, for about 20 minutes.
  7. Serve the cakes brushed with jam and decorated with more orange zest and grated coconut.
