The Nevis Mussels in Brine are selected manually to obtain the best samples which then go through a natural purification process followed by manual cleaning before being steamed. The final cooking is of special care, so that it is homogeneous in time and temperature.

They can be accompanied by a red vermouth or an aged red wine that enhances its flavour, or a generous wine. A not too cold black beer can also be a good accompaniment.
