Lemon Curd Cookies

Lemon Curd is produced from the best quality ingredients. The lemons harvested from the Beira Baixa orchards, with an excellent aroma, give it a unique flavour.

Preparation Method

  1. Start by mixing the flour with the salt and add the butter in pieces, kneading with your fingertips until you obtain a kind of bran.
  2. Add the sugar, egg yolks and lemon juice, and zest, mixing well until it forms a homogeneous dough.
  3. Form a ball with the dough, cover it with cling film, and put it in the fridge for 30 minutes.
  4. After this time, shape them into small balls the size of walnuts, dimple them in the center and flatten them slightly. Place the dough balls on a baking tray lined with baking paper and fill each dimple with a little lemon curd.
  5. Bake in the oven, preheated to 180ºC, for about 8-10 minutes or until lightly browned.
  6. Remove the biscuits from the oven, and add a little more lemon curd, if necessary.
