Vegan Rice Pudding

Healthy creamy sweet rice that is vegan and therefore dairy and egg free.

Preparation Method

  1. Put the water in a pan over high heat and add the rice. When it starts boiling, cover and bring to a slow boil. Cook until almost dry
  2. Add 1/2 liter of coconut milk, cinnamon, lemon peel, and sugar
  3. Cook uncovered until rice is soft and creamy (about 15 minutes more)
  4. Serve with Cinnamon Olive Oil Pies to add a special touch.
