Rice Flour Biscuits

Preparation Method

  1. In a food processor, place the rice, teff and oat flours, cornstarch, brown sugar, cinnamon, baking powder and a pinch of salt.
  2. Grind for a few seconds, until everything is combined.
  3. Add the chunky butter and grind again, until the mixture resembles a fine sand.
  4. Add the water, honey and vanilla essence and mix until it forms a ball of dough.
  5. Wrap it in kitchen paper and put it in the fridge for about 30 minutes.
  6. Remove the dough from the refrigerator and roll it out on a floured surface until it is very thin.
  7. When you have a thin rectangle, cut it into 2-centimeter square biscuits.
  8. Prick them with a fork and put them back in the cold for about 20 minutes.
  9. Remove and bake in a preheated oven at 170ºC for 20 minutes or until golden brown.
