Vegan Pad Thai

An easy, vegan alternative to the classic pad thai.

Ingredients

Preparation Method

  1. Cook the rice noodles (included in the noodle kit) in hot water for about 5 to 8 minutes (until they are slightly soft).
  2. Drain the noodles and rinse them under cold water to prevent further cooking, then set aside.
  3. Heat vegetable oil in a non-stick frying pan and fry 150g of diced tofu for 5-8 minutes until golden brown.
  4. Then fry the sliced mushrooms and red onion. Set aside.
  5. Sauté the chopped red onion. Then add 150g of diced tofu. Add the fried tofu and mushrooms.
  6. Add the cooked noodles. Add the Pad Thai sauce. Continue stir-frying for 5 minutes until all the ingredients are well mixed.
  7. Add the bean sprouts and chives. Keep stirring until cooked through.
  8. Serve your Pad Thai straight from the pan and garnish with crushed cashew nuts, a handful of fresh coriander and lime wedges.
