Canned Sardines with Potatoes in the oven

  1. Start by washing and peeling the potatoes and slicing them together with the onions and tomatoes. Cook the potatoes in a pan of salted water for 5-7 minutes and drain – the potatoes should still be a little tough so they finish cooking in the oven.
  2. Turn the oven on to 200°C and place the sardines and their sauce on a baking sheet. Cover with chopped parsley to taste, onion and tomato and sprinkle salt and pepper to taste. Finally, arrange the potatoes in the baking dish, drizzle with olive oil and sprinkle salt and pepper to taste.
  3. Cover the baking dish with a sheet of foil and bake in the oven for 15 minutes. After this time, check if the potatoes are soft. If not, remove the foil and bake for another 5-10 minutes.
  4. After the previous step, your recipe for tinned sardines and baked potatoes is ready! Serve sprinkled with parsley and enjoy this meal that is so simple to prepare and so rich in flavour.
